The standard game-time slice outside of combat is 10 minutes. This is an easily relatable unit of time, and six of it can be tracked on a d6 to represent an hour.
Whenever possible, the game measures activities in multiples of Combat Actions, Turns, 10 minutes, hours, days, weeks, and seasons. When in doubt,

The combat system is an abstraction, "compressing" events for the sake of drama and playability. It's not supposed to be exact, and there isn't a standardized duration for a Combat Turn.
When estimating how long a combat takes, the GM should go with his guts, and also include "off-stage" things like the post-combat rest and regroup. When in doubt, estimate 10 minutes for the whole combat scene.
